摘要
味觉作为一种感官知觉,具有独特的审美功能,而这点常为国内外许多美学原理及理论着作所忽视。本文在前人相关研究基础上,全面运用了中西美学比较的方法,旨在揭示味觉审美的原理,并以此为中心,探讨中西美学的不同特点。
论文首先简述了中西味觉与审美关系的流变过程,从美学史的角度宏观把握“味”与“美”的关系;其次,具体阐释了中西味觉审美流变趋同与差异的成因,以及“味”在中西美学中的审美表现的差异性;最后,从中西美学体系角度总体分析,以深化中西美学的不同特点,明确“味”范畴是独具中华民族审美特色的重要范畴。论文指出,尽管“味”在中西方都经历了一个形而上化的审美历程,但在中西方的美学理论中却有着截然不同的地位和价值:在以理性至上的西方美学传统中,味觉相较于视听知觉,因其功利性、物质性被认为是低级感官,不具备审美和认识功能,无法获得事物的理性内容,在很长时间里都被排斥在审美维度之外。与西方的美感理论相反,中国美学重体验和感悟,强调审美的直觉性、生活性,将生活之“味”提升到了哲学层面,继而又引入到审美领域,后来逐渐发展成为中国审美体验论系统的核心范畴。因此,可以毫不夸张的说,味觉审美是区分中西美学特点的重要标志之一。
总之,从学术上探讨中西味觉的审美差异,有助于明辨味觉审美的形成原理,进而认清“味”范畴在中国古典美学中的核心地位,同时,也为西方审美走向趣味化提供了某种理论上的参照。

ABSTRACT
As a sensory perception,taste has the unique aesthetic function. But it is often ignored bymost aesthetic principle and theoretical works at home and abroad. In this paper, on the basisof previous related studies, we'll comprehensively use the method of comparing Chinese andWestern aesthetic to reveal the aesthetic principle of taste perception. And using it as a center,we can explore the different features of Chinese and western aesthetics.
Firstly, the paper briefly describes the aesthetic taste of Chinese and Western and therelated rheological process, macroscopic handles the relationship between taste and beautyfrom the perspective of aesthetic history; secondly, illustrates the causes of rheologicalprocess convergence and variance, as well as the differences of aesthetic taste betweenChinese and Western Aesthetics; finally, overall analyzes the sense of taste in Chinese andWestern aesthetic system, deepens the different features of Chinese and western aesthetics,and clears that the “taste” category is an important category which possesses unique aestheticfeature of Chinese nation. This paper points out, although the “taste” has experienced aaesthetic process of metaphysics to enter into the aesthetic field both in Chinese and western.However, its aesthetic theory in Chinese and western has a distinct position and value. In thewestern aesthetic tradition, which based on rationality, compared to the visual and auralperception, taste doesn't have the aesthetic and cognitive function to grasp the rational contentof things because of its utilitarian and materiality. So taste is called the lower sensory,excluded from the aesthetic dimension in a very long time. In contrast with the westernaesthetic theory, Chinese aesthetics, which based on experience and comprehension,emphasizes on intuition and aesthetic life. Chinese aesthetics promote the “flavor” of life tothe level of philosophy, then into the aesthetic field, gradually become the core category of thetheoretical system of Chinese aesthetic experience. Thus it is no exaggeration to say that thetaste aesthetics is one of the important symbol to distinguish the aesthetic characteristics inChina and west.
All in all, the academic research on the aesthetic differences of Chinese and western tastehelps us to recognize the forming principle of aesthetic “taste”, and realize the aesthetic“taste” is in the core position in Chinese classical aesthetics. At the same time, it can alsoprovide some theory reference for western taste category.
